I love making something special for fall celebrations. And these seimi-homemade cupcakes are all about the sweet and savory. At first I was going to make my famous carrot cake recipe in a cupcake form…that was until I was inspired to add bacon to the mix. Not only are they a conversation piece, but they will also leave your guests wanting more.

Semi Homemade Cupcake Recipe Ingredients:

9 Strips of Bacon
1 Box Duncan Hines Perfectly Moist Spice Cake Mix
3 Eggs
1/3 Cup Vegetable Oil

Real Cream Cheese Frosting Ingredients:

1 Stick Butter Softened
8 oz Cream Cheese Softened
1 tsp Vanilla Extract
2 cups Powdered Sugar

I like to make the cream cheese frosting from scratch because there is nothing else that compares to the flavor. Especially when combined with bacon.

Instructions:

Cook the bacon until crispy. Chop 8 strips into bacon bits. Cut one strip into triangular pieces for garnishing.

Prepare the cupcakes according to the instructions on the back of the cake mix box. Add batter to lined cupcake tins and sprinkle with bacon and bake in the oven according to the packaged instructions. Set aside too cool.

A side note for preparing the cream cheese frosting: I like to leave the cream cheese and butter out for an hour to soften. When ready to mix, combine the butter and cream cheese in a large bowl and beat until creamy and lump free.

Add in your vanilla extract and stir well to combine.

With the mixer on low, gradually add in your powdered sugar to the cream cheese mixture until completely combined.

Then frost your completely cooled cupcakes, garnish with bacon and refrigerate until ready to serve.
